I have been on the Keto diet for a few years now and LOVE this lifestyle! When I met Nick he had been very sick for a couple of years: he was in & out of top clinics & hospitals all over the country and STILL didn’t have answers! With special thanks to my favorite keto coach, Maria Emmerich, I introduced Nick to keto and we haven’t looked back; no more more meds for him and we’re both feeling good! I’m always coming up with new recipes and I’ve found ways to adjust most of my pre-keto recipes to fit our lifestyle. This sweet keto chili recipe is a new favorite, especially during these cold, Minnesota months:
(I get a lot of my ingredients from Thrive Market!)
I brown the meat & chopped onions in a cast iron skillet with a little oil.
Once the meat is thoroughly cooked & the onions are soft, I add all of the meat, diced tomatoes, Ro-Tel, tomato paste, and broth to a stockpot. (The pot I use for chili is 12 qts.)
Stir in the chili powder, Swerve (Brown Sugar), worcestershire sauce, garlic, and then salt (adjusting to taste).
Let the chili simmer on low until it thickens, stirring occasionally.
Enjoy!
