Hayseed Homemade: Spring Chicken Salad

Hayseed Homemade Spring Chicken Salad.

This chicken salad recipe is quick, easy, and keto-friendly; three of my favorites in the kitchen. The ingredients are simple and I used a lot of these same ingredients in a few of my other salad recipes, so I always have them on-hand.

Hayseed Homemade Spring Chicken Salad.

What I used:

  • 4 c. shredded chicken (I used a whole rotisserie chicken)
  • 1 c. organic mayo
  • 1 tbsp organic apple cider vinegar
  • 1 tbsp organic coconut aminos
  • 1 tsp ground white pepper (make sure it’s WHITE – I promise it makes a difference.)
  • 1/4 c. Swerve sweetener (granular)
  • 1/3-1/2 a red onion, chopped fine

Shred the chicken & chop your onion. In a large bowl, combine all ingredients – leaving the chicken OUT until everything is mixed well. Add shredded chicken. Chill & serve!

I garnished this salad with pansies & sprouts and served it in cups with organic romaine lettuce to dress it up, keep it fresh, and keep it keto!
